Recipe for Greek Salad
Easy Tropical Greek Salad3 Heads Romaine lettuce
Desired salad dressing
Red sweet pepper, julienned
1 box of organic mixed baby greens
Cherry tomatoes
1 head iceberg lettuce
Feta Cheese (crumbled)
Banana peppers
Hard cooked eggs, cut in wedges
Strawberries
Handful of purple grapes
Pineapple chunks
Pepperoncini
Cashews
Garlic croutons, optional
One can of Mandarin oranges, drained
Kalamata or black olives, pitted
Few shreds of baby carrots
Prepared or purchased red potato salad
Wash and dry the greens. Tear the lettuce and put all the greens in a very large container. Toss together; start putting in other ingredients as your imagination hits your fancy - Cherry Tomatoes, Feta Cheese, Kalamata or black olives, pineapple, mandarin oranges, strawberries, purple grapes, red pepper. Make a depression in the center of the salad so you can fit in the Potato salad; arrange remaining ingredients around the potato salad - Hard cooked egg wedges and cashews. At the end put in the garlic croutons, just a few. Also, garnish with few shreds of baby carrots. Use any dressing your heart desires. Servings: 10-12

1 cucumber

6 tomatoes
1 large red onion
pepper
4 stalks celery
black olives
olive oil
200 g feta cheese
Start by chopping up the celery , red onion, tomatoes and cucumber.
Make sure they are chunky and nice.
Throw in a large bowl, adding as many olives as you care for.
Roughly slice the feta cheese and mix that in too.
The dressing is roughly half olive oil, one quarter vinegar and one quarter lemon juice with pepper added to taste.
Mix up as much as you feel you need, pour over the salad and enjoy.
Greek Pasta Salad Recipe2 cups ruffled pasta
4 ounces crumbled feta cheese
3 tsp fresh lemon juice
1/2 pint cherry tomatoes
1 large cucumber, cut in half and sliced
2 cups cubed chickens
1/2 large red onion, chopped
2 tsp salt
1/2 cup olive oil
1/2 cup kalamata olives, sliced
1 1/2 tsp dried oregano
Combine cooked chicken, tomatoes, pasta, onion and cucumber in a large bowl.
In a seperate bowl, stir together salt and lemon juice until the salt dissolves.
Add oregano and olive oil, mixing well.
Pour over pasta mixture.
Stir to blend.
Add feta cheese and olives.
Cover and chill for 2 hours before serving.
