Irish Apple Potato Mash Recipe
1/2 tsp salt
2 lbs potatoes, peeled and cubed
3-4 tbsp butter
1/3 cup water
1 tbsp sugar
1 lb tart apples, cored and sliced
1/4 tsp white pepper
Cook potatoes in salted, boiling water until tender, drain well.
Meanwhile place apples in a pot with 1/3 cup of water and the sugar; cook at a simmer until soft.
Mash the cooked, drained potatoes thoroughly.
Mash in the cooked butter, salt, pepper, and apples.
Irish Potato Casserole
10 medium potatoes, peeled
2 tsp salt
1 (8 oz) carton sour cream
1/4 c. chopped chives
1 (8 oz) pkg cream cheese, softened
1 clove garlic
Paprika
1/2 c. butter or margarine, melted
Cook potatoes in boiling water, about 30 minutes or until tender. Drain and mash. Beat cream cheese with an electric mixer until smooth. Add potatoes and remaining ingredients except paprika. Beat just until combined. Spoon mixture into a lightly buttered 2-quart casserole, sprinkle with paprika. Cover and refrigerate overnight. Remove from refrigerator 15 minutes before baking. Bake covered at 350 for 20 minutes. Uncover and bake at 350 for 15 to 25 minutes more or until thoroughly heated.
Candy Irish Potato Recipe
4 eggs, separated
1 teaspoon vanilla extract
1/2 cup chopped nuts
1-1/2 cups sugar, divided
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup hot mashed or riced potatoes
1/2 cup raisins
2 teaspoon baking powder
3/4 cup butter or margarine, softened
1 1/2 cups all purpose flour
1 cup milk
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
Frosting
1 teaspoon vanilla extract
2 egg whites
1-1/2 cups sugar
2 teaspoon light corn syrup
1/3 cup water
1/8 teaspoon salt
Cream butter and 1 cup sugar. Add egg yolks; beat well. Add potatoes and mix thoroughly. Combine flour, baking powder, cinnamon, salt, nutmeg and cloves; add to creamed mixture alternately with milk, beating until smooth. Stir in vanilla, nuts and raisins. In a clean mixing bowl with clean beaters, beat egg whites until foamy. Gradually add remaining sugar; beat until stiff peaks form. Fold into batter. Pour into a greased and floured 13x9x2 inch baking pan. Bake at 350° for 40 to 45 minutes or until cake tests done. Cool.
For frosting, combine first five frosting ingredients in top of a double boiler. Beat with electric mixer for 1 minute. Place over boiling water; beat constantly for 7 minutes, scraping sides of pan occasionally. Remove from heat. Add vanilla; beat 1 minute. Frost cake.
