Potato Salad Recipes
Authentic German Potato Salad1 lb bacon
2 Tbsp cornstarch
2 Tbsp water (mix with cornstarch in small container)
1 diced green pepper
1 diced onion
9 boiled potatoes, skinned and cube 1/2 cup sugar
1 1/2 cup vinegar
1 tsp sea salt
1 1/2 tsp freshly ground pepper
Fry bacon until browned, remove from pan, and crumble. Add onions and green pepper to bacon grease and saute until softened. Remove from pan. Toss together crumbled bacon, potatoes, green peppers and onion in a bowl and set aside. Melt bacon grease in saucepan over medium-high heat. Slowly whisk in water and vinegar, then stir in sugar and continue cooking. Add some of the cornstarch mixture, stirring constantly, until thickened. Pour hot mixture over potatoes in the bowl.
Cold Potato Salad Recipe1/2 tsp salt
1 tsp mustard, prepared
1 tsp sugar
1 tbsp salad oil
1 medium onion, minced
3 tbsp vinegar
6 large potatoes
2 teaspoons dill seeds
3-4 stalks celery, diced
In medium saucepan cook potatoes in boiling salted water until tender.
Drain, reserving 3/4 cup of potato water.
Dice potatoes.
Add oil, minced onion and chopped celery; toss gently.
In small saucepan bring the 3/4 cup potato water to a boil; pour over potatoes and onion.
Keep at room temperature for 2 to 3 hours.
Stir in vinegar, mustard, sugar, and dillseed.
Potato salad will be creamy.
Serve at room temperature.
Potato Salad RecipesThis vegetable salad, with a creamy sweet-sour dressing, combines sliced, cooked potatoes with a puree of onion and celery.
5 lbs small red potatoes
1 medium yellow onion
6 celery stalks
2 cups of mayonnaise
1/4 cup sugar
1/2 cup vegetable oil
1/2 cup distilled vinegar
1 Tbsp salt
1 tsp pepper
Put potatoes in a pot; cover with water and boil until tender when poked with a fork. Drain and rinse with cold water. When potatoes are cooled, peel. (Skins will come off easy with a knife.) In a large mixing bowl slice potatoes thinly. Cut up onion and celery; put into a food processor. Process until they become liquid then add to sliced potatoes. Add the rest of the ingredients. Blend well and chill.
